Here Is The History Of Pani Puri

The pani Puri originated from the Magadha region of India, present day South Bihar where it is also known as phoolki. The English meaning of golgappa is "watery bread" or "crisp sphere eaten." The literal meaning suggests that it may have originated from Varanasi. In Bengal and specifically Kolkata, Puchka is considered to be the king of this variety of snacks, compared to its cousins like golgappas or panipuris.

The filling is made by lightly mashing boiled potatoes with black salt, salt, some spices, a generous portion of tamarind pulp (made by mashing ripe tamarind in tamarind water), chilli (powder/chopped/boiled & pasted). The tamarind water Tetul Jol is made by mixing tamarind and spices/ salt and making a light and tart liquid with water. At some places like Deshpriya Park, a very famous variety is made with sour curd, and called Dahi (curd) Puchka.

While many regions in India have their own variations of the panipuri, the most famous ones are from Kolkata, called 'Puchka'.

In Lucknow, this dish is known as "Pani ke bataashe", which means a crispy round dish having spicy water inside. A hole is made using a thumb in the "Bataasha" and a small amount of boiled peas is filled inside it and then the "Bataasha" is dipped in the spicy water or "Pani".

In the Lucknow region the Pani is prepared using mint, tamarind, asafoetida (hing), black pepper, red chili powder and salt.

At Hazaratganj in Lucknow you can savour Paanch Swaad Ke bataashe which means the bataashe are served with five differently tasting Pani one after another.

In most parts of India, a panipuri is made with flavoured water.

Kothu parotta is the famous street food item over here.I love this dish so much..It is a dish that you want to prepare when you have leftover parotta last night.Just tear those,add some onions and stuffs,crack open two egss mix it up and eat it(Don’t forget the spices).If you have ever seen on those street shops they will prepare like the above method,but they will pour a little of that lovely salna in it,it will give a unique taste to this dish.You could also add any chicken curry to this.

Madurai Special Street Food Recipes | Kari Dosa | Bun Parotta

To Make Keema Masala:
Oil – 1 tbsp

Onions 2 Chopped
Green chilli 2 Chopped
Tomatoes 2 Chopped
Ginger garlic paste 2 tsp
Rock Salt 1 tsp
Turmeric powder 1/2 tsp
Red chilli powder 2 tsp
Coriander powder 2 tsp
Cumin powder 1 tsp
Pepper powder 1 tsp
Garam masala 1 tsp
Mutton keema 250 gms
Water

To Make Kari Dosa:
Dosa batter
Mutton keema Masala
Coriander leaves
Oil

Method

1.Heat a pan with some oil, add onions, green chilies, curry leaves and saute them
2.Add ginger garlic paste and saute along
3.Add tomatoes and cook them
4.Add red chili powder, cumin powder, coriander powder, turmeric powder, pepper powder, salt and mix well
5.Add the mutton keema and cook for 5 mins
6.Add enough water and close and cook for 20 mins
7.Finally add garam masala, coriander leaves and mix well
8.Keep this aside
9.Beat an egg and keep it aside
10.Heat a tawa, pour a ladle of the dosa batter
11.After a couple of seconds, pour the egg onto the dosa
12.Add oil and cook it
13.After the egg settles into the dosa, add the mutton keema gravy
14.Add coriander leaves and pepper powder on top of it
15.Flip it and add oil and cook it
16.Serve the Kari Dosa hot

Bun Parotta

Ingredients

Maida – 2 cups
Salt
Sugar – 1 Tsp
Egg – 1 no.
Milk – 1 Tbsp
Oil

Method

In a bowl, add maida, sugar, salt, egg, milk and mix everything
Gradually add water and mix well
Knead it for 10 mins (punch the dough for a softer dough)
Spread some oil over the dough and rest it for 2 hours
Take a little bit of the dough and roll it
Brush some oil over the small dough balls and rest it again for 1 hour
Grease the rolling surface with some oil and roll out the dough thinly
Fold it inwards and roll the dough as shown in the video
Flatten the dough
Heat a rawa with oil and place the dough onto it
Keep the flame on medium low and cook it till you get a golden color on both sides
Seperate the layers of the parotta as shown in the video
Serve the Bun parotta hot .
